6 chicken thighs skinless and boneless ( I buy organic pastured chicken from Goffle Poultry Farm)
1 tablespoon EVOO
1 small red onion chopped
2 cloves garlic chopped
1 tablespoon chopped fresh sage
1 cup apple cider
1/4 cup filtered water ( you can use chicken broth)
2 tablespoons apple cider vinegar
2 -3 apples peeled and cored
sea salt and pepper to taste
Season Chicken both sides
In a heavy bottom pan over medium-high heat, warm EVOO. Working in batches add chicken avoid overcrowding smooth side down cook until golden brown (do not touch it will release easily when it's done) turnover once about 4 minutes each side transfer to plate do not wipe pan add onion and cooking stirring once or twice until translucent add garlic and sage sook until fragrant. Stir in apple cider, water (broth), apple cider vinegar, scraping brown bits from the bottom of the pan. Bring to a boil then return chicken to the pan, smooth side down. Cover and simmer for 5 minutes turn over and let the chicken cook for 5 more minutes or until opaque.
Using tongs place chicken on a platter smooth side up cover with foil.
Raise the heat and cook sauce until it thickens about 5 minutes pour over chicken. In the same pan add apple slices and a splash of water and saute until tender and scatter over chicken garnish with some fresh sage.
