First Avocado Boat

1/2 cup chickpeas rinsed and drained

1/2 cup cucumber (chopped)

1/2 cup tomatoes (chooped)

1 medium shallot (minced)

1 small garlic clove (minced)

squeeze fresh lemon juice

1/4 cup fresh dill (chopped)

drizzle good olive oil

pinch sea salt

fresh ground pepper

Second Avocado Boat

1 egg (poached)

pinch sea salt 

sprinkle chipotle chili

Third Avocado Boat

 1/2 cup Left over Cous Cous 

1/4 cup red pepper (chopped)

1/4 cup zucchini (chopped)

4 black olive ( I like calamata olives)

1/4 cup cilantro (chopped)

1 garlic clove (minced)

sprinkle feta cheese

squeeze fresh lime juice

drizzle good olive oil

pinch sea salt and pepper
