High Protein Blackberry Swirl ICE-POP with a Cookie Crunch

4 Ice Pops

Ingredients

  • 1 cup cottage cheese (I love using @good_culture)

  • 3 tablespoons honey

  • A splash of almond milk (just enough to blend easily)

  • 3 tablespoons blackberry jam (store-bought or homemade like I did!)

  • Zest of ½ a lemon

  • ¼ cup @simplemills lemon thin cookies, crushed — for a little crunch



Directions

  1. In a small blender (I use my @ninjakitchen bullet — perfect size!), blend cottage cheese, honey, lemon zest, and almond milk until smooth.

  2. Choose your favorite popsicle mold — I love push-up molds, but paper cups with popsicle sticks totally work too!

  3. Layer the ingredients into the molds: start with a spoonful of the cottage cheese blend, then swirl in a little blackberry jam, add some crushed cookies — and repeat until filled.

  4. Freeze for at least 3 hours (or overnight).

  5. Before enjoying, let them sit at room temp for 5–7 minutes to soften slightly.
