🍓 Gut-Healthy Blackberry Swirl Ice Pops 🍋
Creamy, tangy, lightly sweet—and packed with protein + gut-loving ingredients.

4 Ice Pops
1 cup cottage cheese (I love using @good_culture)
3 tablespoons honey
A splash of almond milk (just enough to blend easily)
3 tablespoons blackberry jam (store-bought or homemade like I did!)
Zest of ½ a lemon
¼ cup @simplemills lemon thin cookies, crushed — for a little crunch
In a small blender (I use my @ninjakitchen bullet — perfect size!), blend cottage cheese, honey, lemon zest, and almond milk until smooth.
Choose your favorite popsicle mold — I love push-up molds, but paper cups with popsicle sticks totally work too!
Layer the ingredients into the molds: start with a spoonful of the cottage cheese blend, then swirl in a little blackberry jam, add some crushed cookies — and repeat until filled.
Freeze for at least 3 hours (or overnight).
Before enjoying, let them sit at room temp for 5–7 minutes to soften slightly.
