Broccoli Rabe Pesto

Yields

about 1 1/2- 2 cups

Ingredients

1 bunch broccoli rabe ( trimmed and blanched )

1 large clove garlic 

3 tablespoons walnuts or any nut you like (toasted)

zest 1 lemon

1/4 cup parmesan or 2 tablespoons nutritional yeast

3 tablespoons evoo

1 tablespoon blanching water

pinch red pepper flakes

sea salt and fresh ground pepper 

 

Directions

1. trim broccoli rabe the stems are really tough you only want the tip of the stalk .

2. make an ice bath by adding some ice and water in a large bowl set aside

3.  bring a large pot with salted water to a boil toss stir in broccoli rabe blanch 3 minutes take out and drop into ice bath saving blanching water ( you can use to cook pasta giving your pasta extra nutrients ) and you can use a little for pesto.

4. drain broccoli rabe

5. toss it in the bowl of food processor with garlic, walnuts, zest, red pepper flakes and pulse until a sooth consistency.  add evoo process again until creamy. I do not like to add a lot of evvo so if you want your pesto thinner..this is were the blanching water come in drizzle 1 tablespoon at a time
