Carrot Cake Energy Balls


Ingredients

3 CUPS PECANS 

15 SOFT FRESH DATES  PITTED

1/4 cup golden raisins

1 CUP GRATED CARROT (ABOUT 1 CARROT)

1 TEASPOON GROUND CINNAMON

½ TEASPOON GROUND NUTMEG

½ TEASPOON GROUND GINGER

1⅓ CUPS walnuts

Directions

Place 1 cup of the pecans in a food processor and pulse until finely chopped.

 Place in a small bowl and set aside.

 Place the dates, raisins, carrot, cinnamon, nutmeg, ginger, walnuts and the remaining 2 cups of pecans in the food processor and process for 1 minute or until the mixture comes together.

 Shape mixture into balls  ( i use a small icecream scooper) and roll in the chopped pecans to coat. 

Refrigerate until ready to serve. Makes 28
