Cashew Oats


Ingredients

2 1/2 cups Blueberries

1/4 cup + 1 tbsp Flax Meal

1 1/8 tsps Ground Ginger

6 Medjool Dates

2 1/2 cups Rolled Oats

1/2 cup + 2 tbsps Unsalted Cashews

5 cups Unsweetened soy/nut/rice milk (of your choosing)

1 tsp Vanilla Extract

3/4 cup + 2 tbsps Water

Directions

The Night Before:

Rinse the blueberries. 

Combine rolled oats, unsweetened soy/nut/rice milk, flax meal, and blueberries in a bowl and stir.  Cover and refrigerate. 

Remove the pit from the Medjool dates. In a blender, combine unsalted cashews, water, Medjool dates, ground ginger, and vanilla extract. Blend until smooth, adding splashes of extra water as needed. Refrigerate overnight.

In The Morning:

Top oat mixture with Ginger-Vanilla Cashew Cream and enjoy!  A quick and easy way to start your morning off right.
