I was making Veggie Loaf ( meatless meatloaf) and what goes better with meatloaf than mashed potatoes.

Enter Cauliflower Mash

Ingredients

1 large head of cauliflower or 2 (16 ounces) packages of cauliflower rice. I also have used Trader Joe's refrigerator cauliflower rice. 

3 tablespoons butter I used (earthy balance olive oil butter)

2 cups water

kosher salt



Directions

Chop cauliflower into small pieces and grate in your food processor or buy store-bought cauliflower rice.

The smaller the pieces the creamier your mashed will be.

In a large saute pan add butter allow to fully melt now add cauliflower.

(This step adds a deeper flavor.)

Saute for about 3-5 minutes

Stir in water bring to a boil.

Cover and cook until tender about 10 minutes.

Drain cauliflower reserve 1/4 cooking liquid.

Put cauliflower and liquid back into the pot. Mash using an immersion blender and blend until creamy..Serve with a dollop of butter
