You can use a food-processor to make the dough. I prefer by hand its relaxing to me!

30 crackers or more
3 1/4 cups chickpea flour
1 teaspoon sea salt
1 teaspoon baking powder gluten free
2 tablespoons extra-virgin olive oil
plus more fore coating
1/3 plus warm filtered water
sea salt and fresh ground pepper
In a large bowl mix chickpea flour, salt, and baking powder together. Useing your hands, rub the evoo into the flour distribute it evenly with no lumps. Gradually add water until it forms a ball if it seems dry add a little more water. Turn out on a lightly floured surface and knead for 5 minutes. ( You can use a food-processor add dry ingredients than while machine is running add evoo than water.)
Divide dough in half wrap in plastic wrap and form a disc like shape and rest for 15 minutes.
Preheat oven 400 degrees
Line 2 rimed baking pans with parchment
To roll out dough place one piece of parchment down on a flat surface remove 1 piece of dough from plastic wrap dust with flour place another piece of pachment over dough and roll out about 1 inch thick .
Using a knife or pizza cutter cut out squares or any shape you like!
Place on prepared baking pans brush with evoo sprinkle with sea salt and pepper.
Bake 15-20 minutes until golden brown.
Store in an airtight container.
