Chickpea Stew with a little Kick.

If using dry chickpeas add longer time for soaking and 1 hour for cooking.

Ingredients

1 can chickpeas drained and rinsed

1 can organic to tomatoes

1 large onion diced

2 garlic cloves diced

2 tablespoons extra virgin olive oil

pinch red chili flakes

1 tablespoon grated turmeric

 pinch cinnamon

 sea salt and pepper to taste


Directions

in a heavy bottom pot heat olive oil  on medium /high heat, wait 1 minute add onoin and garlic saute' abut 3 minutes until soft. Add turmeric, chilli flakes and cinnamon stirring so spices won't burn cook until fragrant about 2 minutes. Mix in chickpeas stir until  coated with mixture. Add tomatoes give a nice stir and simmer for 20 minutes. Salt and Pepper to taste ...
