Chickpea & Sweet Potato Stew


Yields

4-6 servings

Ingredients

1 onion chopped

1/2 tablespoon evoo or avocado oil

5 cloves garlic smashed chopped

1 large sweet potato cubed

1/2 tablespoon curry powder

1/4 teaspoon chipotle powder

1 1/2 cup filtered water 

1 1/2 cup veggie broth

1/2 -3/4 cup coconut milk

1 15 oz can chickpeas drained and rinsed

1 cup cooked lentis

2 heaping handfuls of spinach


Directions

in a large soup pot sautee onions until soft add garlic cooking until fragenT.

 Add sea salt, pepper, curry powder and chipotle powder stir to coat all veggies.

Toss in sweet potatoes, chickpeas, lentils saute for 3-5 minutes.

Pour in water and veggie broth stir to combined bring to a boil than lower to simmer .

Simmer for 20-24 minutes or until potatoes are fork tender stir in coconut milk
