Chickpea Tomato Cucumber Salad


Ingredients


1 15 ounce can chickpeas, drained and rinsed

1 cucumber, diced

1 cup cherry tomatoes, halved

 1 bunch broccoli rabe

1/2 cup red onion, diced

2 tablespoons  good extra virgin,  olive oil

2 tablespoons lemon juice

1/4 teaspoon salt

1/4 teaspoon pepper

pinch red pepper flakes 

handfull of parsely chopped

handful of cilantro chopped


Directions

 Remove the stems on the broccoli rabe than blanch in boiling water and quickly in an ice bath let it dry completely than give it a nice chop.

In a large bowl combine rest of ingredients with the broccoli rabe with a large spoon mix to combine and letb it rest so all the flavors with marry ....

Toss in a beautiful serving bowl or platter
