These are really good. They taste just like Cookie Dough.. without the calories, dairy, gluten!
I take an extra step I dry the chickpea. So you do not have to use a lot of oats, Oats are good for you great source of energy and
soluble fiber. Everything in moderation!
24 Balls
3/4 cup gluten-free oats
1 15oz can chickpeas (drained and rinsed) and dried
1/4 cup creamy almond butter
3 tablespoons maple syrup
1 teaspoons vanilla
1/8 teaspoon baking soda
1/2 cup dairy-free vegan chocolate chips
pinch sea salt
Line a rimmed baking sheet pan with paper towel.
Drain and rinse chickpeas, lay them out on the prepared pan to dry.
In the bowl of food processor add oats and pulse until a slight powder.
Now add the rest of ingredient (except chocolate chips)
Pulse until cookie dough texture forms.
Add cookie dough mixture to a bowl and fold in chocolate chips.
To make balls chill dough 1/2 hour ( it will not be so sticky)
Use a small ice cream scooper to make balls.
You can refrigerate or freeze the balls in an airtight container.
