Chocolate Chip Cookie (sooo chewy)

Who doesn't dream of milk and cookies! 

Well, I do, but these days milk and cookies are a whole lot healthier. 

Almond flour, coconut oil, and coconut sugar are the stars in these cookies. (OH as for the Chocolate chips dark chocolate all the way) 

If you love Chocolate Chip Cookies you have to make these. 

They are chewy and crispy at the same time. If your a dunker go for it!


NOW THEY ARE VEGAN AS WELL!!

Swap out egg for flax egg (1 tablespoon of flax meal 3 tablespoons warm water)

Ingredients

1/2 cup coconut oil (melted) 

1/2 cup coconut sugar

2 tablespoons maple syrup

1 flax egg

1 1/2 cup almond flour

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1/2 cup dark chocolate chips

Directions

Preheat oven 350'

Line a rimmed baking sheet pan with parchment paper

I a large bowl make flax egg and let sit for a minute while you measure out the rest of ingredients.

Whisk in coconut oil, coconut sugar and maple syrup. 

Using a spatula, add dry ingredients and mix to combined.

Toss in chips .

Chill dough for 30 minutes.

Remove from fridge. I love to use a small ice cream scooper but you can make large cookie if you choose.

Place Cookies 2 inches apart on prepared pan. Bake 10-12 minutes or until golden brown.

Let cool 10 minutes on pan before you place them on the cooling rack.

Get a glass of cold (nondairy milk) ready and ENJOY!!!
