Chocolate Cupcakes with Chocolate Peanut-butter Frosting (gf,gf,nrs)


Prep Notes

Cupcakes who doesn't like cupcakes... I sure do. It like already portioned out for you, unless you indulge in more than one! 

 I'm not a fan of peanuts or peanut butter but, this combo chocolate cupcake and chocolate peanut butter frosting is my jam!





Ingredients

Cupcake

1 1/2  cups almond flour

1/4 cup raw cacoa powder

1/4 teaspoon sea salt

1 teaspoon baking powder

1/4 cup real maple syrup or honey if you like a sweeter cupcake add 3 extra tablespoons

1/4 cup extra virgin olive oil or coconut oil

1/4 cup really hot water

2 eggs

1 tablespoon vanilla

Chocolate Peanut-Butter Frosting

1 cup cteamy penut butter

1/2 cup cocao powder

1/4 cup honey 

Directions

Preheat oven 325' Prepare cupcake pan with liners 8-9

In a coffee cup pour 1/4 cup water and microwave 2 min add cocoa powder and whisk until smooth set aside

In a large bowl whisk almond flour, salt and baking powder

Add maple sytup, olive oil, eggs, chocolate mixture and vanilla mix until well blended

Fill cupcake liner until  3/4 full with batter

Bake 22-25 minute or do the tooth pick test 

Frosting 

In a medium bowl add all ingredients and using a hand mixer mix until fluffy.
