Chocolate Zucchini Walnut Muffins

I use walnuts and walnut butter you can use almond or pecan they are both great options.

Ingredients

2 cups almond flour

3/4 cup raw cacao powder sifted

3 teaspoons baking soda

pinch sea salt

1 cup shredded

1/2 cup good  extra virign olive olive or coconut oil

1/2 cup maple syrup

1 teaspoon apple cider vinegar

1 teaspoon vanilla

3 eggs 

1/2 cup dark chocolate chopped in small pieces  

1/2 cup walnut butter

Directions

Preheat oven 375' line muffin tin with cups

Squeeze out excess moisture in zucchini

in a medium bowl mix together the  olive oil, walnut butter,eggs, syrup and vanilla.

In a seprate bowl add flour, sifted cacao powder, baking soda,salt and apple cider vinegar whisk until combine.

Pour dry ingredients into wet mix well fold in zucchini and walnuts . Add about 1/4 cup of batter into each muffin cup.Sprinkle with dark chocolate pieces. Lower oven to 350' bake for 20-25 minutes
