Cinnamon Swirl Muffins.

1 cup almond milk or other milk of choice
1 tablespoon lemon juice
1⅓ cups gluten-free all-purpose flour blend
⅔ cup super fine almond flour
⅔ cup coconut sugar
2 tablespoon maple syrup
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
⅓ cup avocado oil or other neutral tasting cooking oil
Cinnamon Swirl
¼ cup Unsweetened apple sauce
¼ cup Coconut sugar
2 tablespoons Maple syrup
1 teaspoons cinnamon
Preheat oven to 375º. Line a 12-count muffin tin with paper liners and set aside. This recipe may make a few more than 12 muffins.
In a small bowl mix together applesauce ¼ cup coconut sugar 2 tablespoon maple syrup and 1 teaspoon cinnamon and set aside.
Combine milk and lemon juice in a small glass dish and also set aside.
Blend together dry ingredients in a large mixing bowl—flour(s), sugar, baking powder, baking soda, salt cinnamon. Mix in sour milk, maple syrup and oil, stirring until smooth.
Fill paper liners ½ full, or muffin batter, add teaspoon cinnamon swirl top off then top with more batter filling ¾ full. To finish off add a teaspoon of cinnamon swirl on top of muffins using a toothpick or knife swirl .
Place pan into the oven bake 20-25 minutes Makes 12–14 muffins.
