Cookie Dough Protein Balls (no bake)

My new Raw Cookie Dough Protein Balls are ready to rock your world. If you close your eyes and take a bite you would never know they are egg free, gluten free, gluten-free and made with chickpeas! 

They are truly delish!

(I soak the chickpeas overnight even the ones in the can. I find that's the only way I can digest them )

*just a note if you don't pulse the oats a fine powder the balls will be a little grainy and darker in color but the flavor is still yummy!


Ingredients

1 can chickpeas rinsed and drained

2 teaspoons pure vanilla extract

1/4 cup creamy almond butter

1-2 scoops of your protein collagen powder I use @vitalproteins 

1/2 cup pure maple syrup ( I used a little more than 1/4 )

2 tablespoons flax seed meal

2 tablespoons oats

pinch sea salt

1/3 cup chocolate chips 

Directions

In the bowl of your food processor pulse the oats and flax meal until its powder-like add the rest of ingredients except chocolate

 chips pulse until resembles cookie dough. Dump it into a small bowl and add chips. Using a small ice cream scoop, scoop cookie on to a plate and freeze for 1 hour. I like to take them out and let them rest for a few minutes so they are soft.
