Wild About Bean Chili

Ingredients

2 tablespoons good olive oil

2 yellow onions diced 5 cloves garlic smashed and chopped 

1 jalapeño finely chopped 

1 3/4 tablespoons cumin 

1 1/2 tablespoons chili powder 

1 1/2 cup mushrooms finely chopped ( cremini or shiitake mushrooms) 

1 zucchini diced 

1 garnet sweet potato diced 

2 cans black beans drained and rinsed 

1 can kidney beans drained and rinsed 

1 can chickpeas drained and rinsed 

1 can crushed tomatoes (San Marzano preferred) 

2 cups water 

1 teaspoon sea salt 

1/2 bunch fresh cilantro 

1 1/2 cups kale finely chopped diced avocado 

Directions

1. in a heavy bottom soup pot add oll heat 1 minutes add onion, garlic and jalapeno stir until soft about 3 minutes. 

2. Add cumin stir consistentlt until fragrant about 2 minutes .

3. Add mushrooms, zucchini,sweet potato and chili powder .Saute about 3 minutes. Than add tomatos, all the beans ,water ,sea salt and cilantro. Cover with lid reduce heat and cook for about 35-40 minutes or until sweet potato is tender.

4. Remove from heat add kale stir until wilted 

5. Serve . Add diced avacado for garnish ....enjoy!
