Crescent Cookies

Cookies are one of my favorite things !!!

These are on the tops of the list ...they melt in your mouth ..

You can use organic confectionery suga..

I prefer monk fruit it doesn't spike your blood sugar. 

Yields

12-16 cookies

Ingredients

1 cup almond flour

3 Tablespoons vegan butter

5 Tablespoon powdered sugar 

1/2 teaspoon vanilla

pinch sea salt

1/3 cup chopped pecans 

Directions

Preheat oven 325

line baking sheet pan with parchment paper

Powdered Sugar

1/2 cup monk fruit sugar

2 tablespoons arrow root

I use my nutri-bullet to blend them together.

Cookies

In a small bowl add almond flour, butter,  1/2 the sugar, vanilla and salt mix until combined. Add in pecans and roil into a log to form crescent shape. Arrange them 1 inch apart on the sheet pan.

Bake for 18-20 minuntes until golden brown.

Let cookies cool completly before rolling them in the reserved sugar.
