Cucumber Avocado Gazpacho

This a such a refreshing chilled soup for the hot days of summer.

All you need is a blender no cooking !!! The avocado creates such a creamy texture, the nori gives it a little salty crunch and the yogurt adds a little tang .. Hope you enjoy it xxo

Ingredients

1/4 cup evoo

1/2 cup filtered water

2 tablespoons white wine vinegar

pinch red pepper flakes

1 avocado

2 large cucumbers chopped

1 small shallot chopped

2 cloves garlic minced

4 tablespoon nori chopped or torn

1 tablespoon hemp seeds

drizzle non-dairy yogurt

Directions

Put evoo,water, sea salt, red pepper flakes, garlic, shallots, avocado, and cucumber into s blender and blend until smooth.Taste and adjust seasoning that you feel necessary. Chill in fridge for 1 hour. Before serving divide into 4 bowls and on top of each bowl drizzle a little yogurt, sprinkle nori and hemp seeds
