
1 block feta
4 cups cherry tomatoes
3 tablespoons EVOO
10 basil leaves torn
sea salt and fresh pepper
Optional splash heavy cream and a 1/2 shot of vodka
Preheat oven 350
On a rimed baking sheet pan toss cherry tomato with pinch sea salt and a drizzle evoo
Add block feta in the middle of tomatoes nice and snug drizzle evoo, sea salt and fresh pepper
Bake 30 minutes checking 25 minutes to see if cheese is soft and gooey..
you do not want to over cook feta it gets chunky not creamy.
Mean while cook pasta, You can use and pasta with ridges.
My man loves @cipriani Tagliarelle it is an egg pasta thin but long like fettuccine.
When Feta & Tomatoes are a touched caramelized take them out off oven still in the pan toss torn basil and mix feta and tomatoes until you get a sauce like consistency still have chunks of tomato.
Add splash of heavy cream and shot of vodka.
Drop pasta in and mix so all that yummy tomato feta sauce covers your pasta.
