Who Doesn't love WAFFLES? Breakfast, Snack, really anytime!
I am a true chocolate lover!! I tried to give it up completely, didnt work out! I am all about ingredients! Sourcing out the best quality ingredients thats is healthy and thats great for your body and most of all eating mindfully. These waffles are made with almond flour but you can use any alternative flour as well as avocado oil you can use coconut oil even olive oil. For sweetness I love raw honey or maple syrup or even coconut sugar. When it somes to stevia I am not a fan.
These are so good plain or a dollop of coconut cream with sprinkle hemp seeds and shaved chocolate.
I pack them in my boys lunch bag and his friend don't know that they are a "Healthy" waffle. They say "wow your mom gives you chocolate waffles"....yep...
This is a must try!
4 servings
1 cup almond, coconut or brown rice flour
1/2 cup raw cacao
1/4 cup flaxseed meal
1 teaspoon sea salt
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
3 scoops @vitalprotein collegen peptides (optional)
2 eggs room temperature
1 1/2 cup almond milk
1/2 cup coconut oil or avocado oil
1/4 cup real maple syrup ( when making them a lunch box snack add 2 extra tablespoons)
2 teaspoons vanilla
2 tablespoon chopped dark bittersweet chocolate
Heat waffle iron
Whisk together all dry ingredients medium bowl. Whisk all wet ingredients except chopped chocolate until smooth. Add dry ingredient to wet and whisk until smooth, mix in chopped chocolate .
Lightly coat waffle iron with non-stick spray I use avocado or olive oil.
Scoop out batter onto waffle iron I like to see uneven edges but it is your waffle you can make it a full one!
Without gluten waffles will be extra tender...
Serve waffles topped with coconut cream and a sprinkle of hemp seeds or rasberries.
