HERB STUFFING (HEALTHY) Grain Free,Paleo,Vegan,Vegetarian

This Stuffing is absolutly incredablely delicious. It taste just like the stuffing my grandmother made.

You can add sausage, mushrooms,chesnuts it realy is the basic herb stuffing minus the bread!

Cooking Time

45-50 minutes

Ingredients

1 can of chick peas rinsed and drained

2 celery stakes chopped

2 medium carrots peeled and diced

1 large onion chopped

3 cloves of garlic minced

2 tablespoons fresh tyme pulled off leaves a chopped

1 - 1 1/2 cups of vegtable or chicken stock

1 tablespoon fresh rosemary chopped

2 tablespoon good extra virign olive oil

1 1/2  tablespoon of grass fed butter (optional)

sea salt and fresh pepper

Directions

Preheat oven 350' degrees

in a large saute' pan add 1tablespoon butter and olive oil.

Add carrots, celery, onion, and garlic saute about 8 minutes stiring occasionally until nice and tender and your (kitchen smells amazing )

Stir in herbs let cook for a minute than fold in chick peas mix until well combined.

Add 1/2 cup broth cook until evaporated using a potato masher or the back of a spoon mash about 1/2 the mixture if it seems dry add the other 1/2 cup continue cooking you want the texture to be creamy.

Take off stove put it into a casserole dish abke 30 minutes take out brush top with reserve butter and bake 15-20 minutes or until the top is golden brown and crunchy.

Garnish with parsely.
