Gut Healthy Happy Trail Mix with a Chocolate Drizzle

Ingredients


  • ½ cup raw almonds (soaked & dried if possible)

  • ½ cup raw walnuts or pecans

  • ¼ cup pumpkin seeds (pepitas)

  • 2 Tbsp chia seeds or flaxseeds

  • ¼ cup unsweetened dried cherries or raisins

  • ¼ cup unsweetened coconut flakes (optional)

  • ½ tsp cinnamon (optional)

  • Pinch of sea salt

🍫 For the Chocolate Drizzle:

  • ½ cup dark chocolate chips or chopped bar (70% cacao or higher)

  • 1 tsp coconut oil (for smooth melting)


👩‍🍳 Directions:

  1. Mix the Trail Mix:
    In a large bowl, combine almonds, walnuts, pumpkin seeds, chia or flax seeds, coconut flakes, dried fruit, cinnamon, and sea salt. Set aside.

  2. Melt the Chocolate:

    • In a heatproof bowl, add the chocolate and coconut oil.

    • Microwave in 20-second bursts, stirring between each, until smooth (or melt using a double boiler on the stovetop).

  3. Combine & Set:

    • Spread the trail mix onto a parchment-lined baking sheet in an even layer.

    • Drizzle the melted chocolate over the mix using a spoon or fork for zigzag effect.

    • Let it cool at room temp or place in the fridge for 15–20 minutes until the chocolate hardens.

  4. Break & Store:
    Once the chocolate is set, break it into clusters or toss gently. Store in an airtight container at room temp (cool spot) or fridge for up to a week.
