½ cup raw almonds (soaked & dried if possible)
½ cup raw walnuts or pecans
¼ cup pumpkin seeds (pepitas)
2 Tbsp chia seeds or flaxseeds
¼ cup unsweetened dried cherries or raisins
¼ cup unsweetened coconut flakes (optional)
½ tsp cinnamon (optional)
Pinch of sea salt
½ cup dark chocolate chips or chopped bar (70% cacao or higher)
1 tsp coconut oil (for smooth melting)
Mix the Trail Mix:
In a large bowl, combine almonds, walnuts, pumpkin seeds, chia or flax seeds, coconut flakes, dried fruit, cinnamon, and sea salt. Set aside.
Melt the Chocolate:
In a heatproof bowl, add the chocolate and coconut oil.
Microwave in 20-second bursts, stirring between each, until smooth (or melt using a double boiler on the stovetop).
Combine & Set:
Spread the trail mix onto a parchment-lined baking sheet in an even layer.
Drizzle the melted chocolate over the mix using a spoon or fork for zigzag effect.
Let it cool at room temp or place in the fridge for 15–20 minutes until the chocolate hardens.
Break & Store:
Once the chocolate is set, break it into clusters or toss gently. Store in an airtight container at room temp (cool spot) or fridge for up to a week.
