Healthy Hamantaschen


Ingredients

I¼ cup softened coconut oil

¼ cup honey

1 egg

1 1/2  cups of whole wheat flour

¼ tsp baking powder

 pinch sea salt

Peanut Butter and Jam 

Directions

Preheat your oven to 350F

Line a baking sheet pan with parchment and lightly spray.

In the bowl of your mixer add the oil, honey, egg and vanilla and mix to combine.

 Add baking powder, salt 1/2 the flour keep adding flour a little at a time until the dough is not so sticky.

It will be kinda stick but wont stick to your hands like glue. 

 Let the dough sit for a few minutes while you prep your working space to roll it out.

Roll out the dough so it is thin, but not too thin. About an ⅛ of an inch thick.

Using a round cookie cutter. Cut out round cookies.

Make an imprint into the middle of each round with your thumb and place ½-1 tsp  of peanut utter and jam 

Pinch together the sides to create the triangular shape. Pinch it well!

Carefully lift and place onto your greased baking sheet

Bake for around 10 minutes till it gets a bit golden. Watch it so they do not overcook. 

You may need 5 more minutes depending on your oven.

Let them cool before tasting. Cookie will harden more as they cool.


Notes

I like to roll out dough on parchment paper sprinkled with a little flour and occasinally dip cookie cutter in flour so dough doesn't stick!
