Don't you just crave a creamy, tangy, dressing once in a while? I do that's where this came from, my intense craving for Caesar Salad!
I used kale for this recipe I use it on romaine, endive, spring mix and I am making it for super bowl as a crudites.
Caesar Dressing
1 avocado
juice 1 lemon
2 anchovies (optional)
1/2 -1 cup filtered water
1/4 cup @sirkensington vegan mayo
4 cloves garlic
2 teaspoon dijon mustard
pinch sea salt
nutritional yeast or Parmigiano for serving
Kale + Avocado Caesar Salad
1 bunch kale stems removed and chopped about 6 cups
1 avocado chopped
Nutritional yeast or Parmigiano and hemp seeds for serving.
In the bowl of food processor add avocado, lemon, mayo, garlic, anchovies, mustard, and 1/2 cup water process until smooth and creamy if you want it thinner add little more water at a time.
Assemble Salad
In a medium bowl add kale, chopped avocados, and about 1/2 the dressing. Toss until you get the tangy delicious dressing on everything. Place on a plate and top with Parmigiano and hemp seeds.
