2 acorn squash scrubbed
3 tablespoons extra olive oil
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon paprika
2 tablespoon real maple syrup
sea salt and pepper to taste
1. preheat oven 400'f line a baking sheet pan with parchment paper
Cut each squash in half lengthwise and remove seeds. Trim and discards ends, then cut each half into 1 inch thick slices.
2. In a large bowl whisk evoo, chili powder, chili powder, cumin, paprika, maple syrup 1/2 teaspoon sea salt 1/4 teaspoon pepper.
3. Toss slice in maple chili mixture make sure they are well coated.
arrange slices flat on prepared baking sheet pan single.
Roast until browned slightly turning once
Season with sea salt sprinkle with chopped parsley if desire !!
