Mediterranean Cauliflower Rice

Ingredients

16 ounces cauliflower rice

2 tablespoons good olive oil

2 tablespoons marinated red onion

5 sundried tomatoes chopped

1/4 of cucumber diced

1/4 cup fresh basil chopped

2 tablespoons pine nuts toasted

2 tablespoon  feta crumbled cheese

1 fresh lemon squeezed

sea salt and pepper to taste


Directions

Preheat oven 375 

On a rimmed baking sheet evenly distruput cauli rice drizzle olive oil roastfor 7-10 minutes or until golden brown 

Meanwhile in a large bowl chop and add sundried tomatoes, cucumbers abd basil.  Toss in toasted pine nuts an marinated red onion when cauli rice is finished toss in bowl mix to combine add feta lemon juice sea salt and pepper if dry add 1 moe table spoon olive oil.

Garnis with basil wedge of lemon.
