Mushroom & Black Bean Burger

You don't have to be plant-based eater or vegetarian to love this Mushroom Burger. The texture and flavor are right on point!

Ingredients

1 yellow onion chopped

3/4 pound mushrooms I mix cremini and shiitake

2 tablespoons fresh thyme leaves

1 can black beans rinsed and drained (  i have also used black-eyed beans)

1 egg lightly beaten 

2 tablespoons nutritional yeast or 1 cup grated parmesan

2 garlic cloves crushed

1/2 cup panko breadcrumbs or 1/2 cup cooked quinoa



Directions

Heat  2 tablespoons olive oil in a large saute' pan over medium-high heat, cook onions, mushrooms, and thyme about 10 minutes or until golden, stirring occasionally. Let cool for 10 minutes.

Place mushrooms mixture, beans and garlic to food processor pulse until chopped coarsely. 

Transfer mixture to a large bowl stir in egg, bread crumbs, and cheese season with sea salt and pepper. 

Shape into 4 patties place on a plate and refrigerate for 30 minutes.

Spray pan with evoo cook patties about 4 minutes on each side or until browned and heated through.

I stay away from bread as much as possible so I use 2 slices of  grilled sweet potato.
