When you prep this nutty and green pesto and simple soffretto you can make this beautiful soup in a SNAP!!!

Soffritto (starter)
1/4 cup extra virgin olive oil
2 medium onions (chopped)
3 leeks white and light green only (finely chopped)
3 celery stalks finely chopped
Sea Salt and Pepper
PESTO
2 tablespoons raw pistachios
1 clove garlic
1 cup basil
1 cup parsley
1/2 cup spinack
1/4 cup extra virgin oilve oil
1/2 teaspoon fresh grated lemon zest
Sea Salt and Pepper
SOUP
1/2 Tablespoon
5 sprigs fresh thyme
4 cups filtered water (or chicken stock)
1 cup sugar snap peas (trimmed and sliced in half)
1/2 bunch tuscan kale (ribs and stems removed and leaves rough chop)
1 14 ounce can cannelli beans rinced and drained (if using dried prep before hand and cook them)
1 cup fresh peas or frozen
pinch red pepper flakes
