Cauliflower Orange Scented Rice Pilaf

Ingredients

Dressing

1 tablespoon orange zest

3 tablespoons fresh squeezed orange juice

1 tablespoon rice vinegar

3 teaspoons evoo 

1 teaspoon fresh grated ginger

1/2 teaspoon sea salt

pinch red pepper flakes

Pilaf

1 head cauliflower trimmed, and cut into florets

1 tablespoon evoo

1 large shallot chopped

2 scallions thinly slicede

sea salt and pepper

1/4 cup toasted  almonds chopped

1/4 cup pistachios chopped

1/4 cup pomegranate seeds

1/3 cup  fresh cilantro chopped

1/3 cup fresh parsely chopped

1/4 cup fresh mint chopped

2 teaspoons orange zest

Make dressing: in a small bowl whisk together orange zest, orange juice, evoo, rice vinegar, sea salt pepper. Set aside.
