This soup freezers Beautifully

1 yellow onion
5 garlic cloves smashed and chopped
1 teaspoon sea salt
2 medium leek (use only light green and white cut 1/4-inch slices)
5 medium zucchini 1/2-inch dice
2 pound frozen organic peas
61/2 cups of filtered water or more
1/2 cup chopped dill
fresh ground pepper
3 tablespoons extra virgin olive oil
Warm olive oil in the heavy bottom pot over medium heat. Add onions, and saute' for 5 minutes or until golden brown. Stir in garlic and salt cook for another minute add leeks and cook 2 minutes. Add zucchini peas and water bring to a boil over high heat. Cover pot, reduce to low and simmer for 6 minutes or until peas and zucchini are tender.
Remove from heat stir in dill and set aside for 10 minutes before blending. Blend soup in batches. If soup is too thick add a little more water. Season with sea salt and pepper. Serve warm .....
