Peach, Corn & Avocado Salad

I love this salad it screams summer especially with tequila vinaigrette ...

1 ounce tequila

1/2 cup evoo

1/2 shallot minced

juice 1 lime 

pinch sea salt and pepper

add all ingredients in a jar and shake 

taste for seasoning

Ingredients

2 peaches 

1-2 Avocados

2 ears corn grilled and sliced off cob

1/2 red onion thin sliced 1/2 moons

2 garlic cloves crushed or minced

1 cup cherry tomatoes quartered

1/4  chopped cilantro

juice 1 lime

sea salt pepper 

Directions

Grill corn with husks off ( Its all about texture and color) 

Meanwhile cut up peaches I leave skin on toss them in a large mixing bowl

cut avocado in cubes add to bowl with pinch of sea salt and lime juice mix 

remove corn when golden brown .. ( the whole corn doesn't have to be toasted parts)

add corn, garlic, onion, tomatoes, cilantro, sea salt pepper.

OPTIONAL 

add 1/2 of tequila vinaigrette toss to combine 

For garnish drizzle a little vinaigrette and some chopped cilantro
