1 3/4 cup gluten free flour
3 tsp baking powder
2 ripe bananas
1 cup chopped peaches
1/4 cup almond milk or any non dairy milk
3/4 cup olive oil
2 eggs
1 teaspoon fresh grated ginger or 1/2 teaspoon of ground
1/2 cup coconut sugar
1 tablespoon monk fruit powdered sugar
preheat oven 350'
Spray bundt pan with olive oil spray
1. In another medium bowl add gluten-free flour baking powder pinch sea salt
2. in a medium bowl mash banana until they're no lumps mix in coconut sugar, olive oil and ginger
3. whisk in eggs and non dairy milk ( I do this all by hand so I do not over mix).
4. fold dry ingredients into wet ingredients when combine fold in peaches .
5. pour into prepare bundt pan or 8 inch pan tap to let out any air bubbles
Place baking pan in center of oven bake 35-45 minutes or until tooth pick comes out clean
Cool about 1hour if you can !!
Sprinkle monk fruit powdered sugar and enjoy xxo
