Pre heat oven 350'
4 pounds peaches peeled and sliced thin
3 tablespoons of raw honey
1 cup blueberries optional
the juice of 1 lemon
1 tablespoon fresh grated ginger
2 tablespoons chia seeds
Crumble
1 cup gluten free oats
1/2 cup chopped pecans or walnuts optional
1/2 cup almond flour
1/4 cup maple syrup
1/4 cup coconut oil
1/2 teaspoon cinnamon
PRE HEAT OVEN 400'
In a large bowl add peaches, blueberries, lemon, honey, chia seeds and ginger and mixed so everything is well coated set aside .
In a medium bowl mix together oats, almond flour, maple syrup, cinnamon, coconut oil pinch sea salt.
Add peach mixture to a casserole dish and spoon crumble mixture on top. PLACE CASSEROLE DISH ON A RIMMED BAKING DISH .
Put in preheated oven lower temp 375 and bake 30-35 minutes or until crumble topping is golden and juices are bubbling .
