Peanut butter Raspberry Chia jam Protein Balls


Prep Notes

*Use creamy peanut butter in this recipe* ..

Ingredients

Raspberry Chia Jam

1 pint raspberries

1 tablespoon chia seeds 

2 tablespoons honey

juice 1/2 lemon (fresh)

2 tablespoon water

Peanut Butter Ball

12 dates chopped

1/2 cup oats (GF)

1 cup creamy peanut butter

1 teaspoon vanilla

1/4 cup honey or maple syrup 

Chocolate Dip

1/2 cup chocolate chips ( I use Hu Chocolate but lily is a good option  )

1 teaspoon coconut oil

Directions

Jam

In a small saucepan toss in raspberries, 2 tablespoon honey, lemon juice, chia seed and water bring to a simmer mash all ingredients together. Take off heat and put into a bowl place in refrigerator until ready to use.

PB Protein Balls

Place oats in bowl of food processor and process until flour like now add the rest of the ingredients process until combined.

MOLD

Take out chia jam from fridge

I like to use a small ice cream scoop for this 

Scoop small amount of peanut butter ball mixture into mold press down with finger .

Now add about 1/2 teaspoon to 1 teaspoon Jam to each mold and freeze for 1 hour 

Chocolate Dip

In a small bowl mix chocolate chips and coconut butter . Place in microwave to melt 

Line a baking sheet with parchment paper.

Dip each mold into chocolate and lay on prepared baking sheet chill ..
