4-6 skinless chicken thighs
1 red onion diced
5 cloves garlic chopped
2 -3 cups fresh pineapple
2 teaspoons cumin
juice 1 lime
1 teaspoons chili powder
1 jalapeno seeded and rib removed
1 tablespoon sriracha
1/4 cup water
In a large sauté pan sauté all veggies until soft.
Nestle chicken in middle on pan add pineapple, sriracha, and water
Simmer about 20 minutes until chicken is cooked through.
Shred chicken
(optional) add everything to a pan and broil until crispy
Serving ...place on a platter and drizzle lime juice and scatter lime wedges
