2 organic eggs
2 cups cherry or grape tomatoes
1 tablespoon extra virign olive oil
2 slices ezekiel
2 teaspoons fresh thyme
pinch sea salt and pepper
Preheat oven 425'
Place tomatoes on a rimmed baking sheet drizzle olive oil pinch salt and pepper, roast 20 minutes or until tomatoes are juicey.
In a small pot fill 1/2 way with water and bring to a boil add eggs cook for 2 minutes. Meanwhile toast bread and when eggs are finished put on top of toast top that with roasted tomatoes and sprinkle with fresh thyme pinch pepper ....
