Pumpkin Chocolate Chip Ice-Cream ( vegan ice-cream)

Summer Meets Fall ...The flavors of fall in a creamy Ice Cream.

I recently went to Vanleewan Ice Cream parlor in NYC. and had their vegan Ice cream and I had to make it for myself.

I choose pumpkin just because it was September 3 and it was 65' outside. 

I love the combo pumpkin and chocolate love chocolate with basically everything!


Ingredients

1 1/2 cup cashew milk 

1 can coconut cream

1 can  organic pumpkin 

 1/4 cup if you like it sweeter 1/2 cup pure maple syrup 

pinch sea salt 

1/2 cup 70%-90% raw cacao chopped


Directions

in a high-speed blender add all ingredients except chocolate. 

Blend until combine, taste for sweetness.

Add chopped chocolate and pulse until it's mixed throughout.

Refrigerate for 1/2 hour. Take out of a fridge and pour ice cream mixture into ice cream maker and follow direction for a machine. When it's finished scoops it into the parchment paper lined loaf pan and freezes for 1/2 hour. I love it kinda soft it's a lot creamier.
