This soup is like seeing an old friend and it feels like you were together just the other day!

It's pumpkiny, creamy, my version of comfort food and oh so delicious.The first sip you know its Autumn.

When I can I love usuing turmeric this is such a powerful spice for inflamation and the color is brillant.

Yields

6-8

Ingredients

2 cups of organic pumpkin puree  

3 leeks chopped 

3 cloves garlic minced

1 tablespoon fresh grated turmeric or 2 teaspoons of dry

2 tablespoons coconut oil

2 cups coconut milk 

 3 to 4 cup vegetable broth 

pinch each sea salt and pepper


Directions

In a large heavey bottom pot add coconut oil, saute' leeks, garlic  and until fragerent, about 5 minutes.

Then add pumpkin, coconut milk, turmeric and 2 cups of broth at a time (you might not use 4 all cups) simmer for 20 minutes. 

Use a hand held blender and puree' while pot is hot. Add a little more broth if it seems too thick.

Garnish with pomergrate seeds and sliced scallions.
