Roasted Cauliflower Spaghetti

My great-grandmother (nanny) was the cook in my family. I loved when she would make Roasted Cauliflower Pasta, this is almost identical to hers minus the bread crumbs and I love to use chickpea spaghetti @eatbanza.

 This is when you love that you started Meal Prepping and Batch cooking.  

Taking a day or one afternoon to prep your meals (cut up all veggies, bag salads, clean and marinate meats)  roast 2, 3 heads of cauliflower and garlic, broccoli any veggie you're going to use for a meal that week save soo much time and energy.

Cauliflower Spaghetti.

So when you COME HOME FROM WORK, all you have to do is boil water heat up the cauliflower make a gorgeous salad and "TA DA"

you have a fabulous meal in less than 20 minutes. Can't get better than that!

Ingredients

1 large head of roasted cauliflower

5 cloves roasted garlic smashed

3 tablespoons EVOO

1 teaspoon lemon zest

1 teaspoon fresh ground nutmeg

pinch sea salt and pepper

1 box spaghetti ( i love banza )

a handful of basil

1/2 cup toasted hazelnuts 

 nutritional yeast or shaved pecorino (optional )

Directions

  Bring to a boil a large pot of salted water, add spaghetti, stir occasionally to prevent sticking.

In a large saute pan add1 tablespoon EVOO, toss in cauliflower and smashed garlic saute 5 minutes .  Turn off heat, drain pasta add to saute pan with a touch of pasta water, lemon zest, nutmeg sea salt pepper and basil.  Turn onto a platter add hazelnuts, garnish basil and cheese.  Serve with LOVE!
