Roasted Eggplant and Onion Salad

Ingredients

1 big eggplant

2 medium onions

1 cucumber

1 cup of cherry tomatoes 

Good EVOO 

sea salt and fresh pepper

Directions

preheat oven 425'


Cube both eggplant and onions place them on a baking sheet drizzle evoo sea salt and pepper.

Roast for 40 - 45 minutes

Cube cucumber and halve tomatoes and toss them with eggplant and onion drizzle with a little more evoo and garnish with torn basil leaves.
