Roasted Turmeric Chicken on Sweet Potato Toast and a Gooey Hard boiled Egg on a bed of Arugula

Ingredients

2 organic garnet sweet potatos

4 boneless skinless chicken breasts

1 tablespoon turmeric

salt, to taste

juice of a lemon 

2 minced garlic cloves

1 tablespoons coconut amino 

1 tablespoon raw honey

4 tablespoon EVOO

1 avocado

4 eggs

handful arugula

pinch red pepper flakes



Directions

Sweet Potatoes

Using a Mandoline slice sweet potatoes 1/4 inch than using a toaster toast until they're brown on outside and tender inside


Chicken

Whisk together turmeric, lemon juice, garlic, salt, aminos, raw honey and olive oil into a marinade. Take out a few tablespoons and reserve for basting. Combine marinade and chicken and marinate 2-3 hours. Using a  lightly greased grill pan on high sear chicken on both side than roast in 400' oven for 10 minutes or until cooked through


Gooey Hard Boiled Eggs

In a pot filled, 1/2 way with water, bring to a boil. Gingerly place eggs in (i use wok basket) water and cook 6.5 minutes (gooey)

take eggs out and put them in cold water (immediately)


To ASSEMBLE

Turmeric Chicken Sweet Potato Toast

Lay sweet potato toast on flat surface using a fork smash  1/4 of avocado pinch sea salt and squeeze lemon juice top avocado with a few pieces of sliced chicken and garnish with a pinch of red pepper flakes

Gooey Hard Boiled Egg Sweet Potato Toast

Lay sweet potato toast on flat surface toss arugula on toast add a few drops of EVOO pinch sea salt and arrange sliced gooey egg pinch sea salt and fresh pepper

Arrange on Flat Platter and serve with LOVE!
