1cup gluten free pancake mix ( I used bobs red mill )
1 cup chick pea flour (I used bobs red mill )
1 tablespoon olive oil
2 eggs
3/4 -1 cup non dairy milk
1 teaspoon fresh thyme ( optional)
pinch sea salt
Preheat waffle iron according to instructions
in a medium bowl whisk together all ingredients until smooth.
You want it to be in more like pancake consistancy so you can add as much or as less milk .
Pour 1/2 cup in center of waffle iron and gently spread..
cook 2-3 minutes ...
Serve with fried egg, scramble or just as is !
