Savoy Cabbage with Fresh Dill and Pistachios

Ingredients

2 tablespoons extra virgin olive oil

1 large shallot sliced

1 large Savoy cabbage head cored and sliced into 1/2 inch ribbions

1 teaspoon sea salt

1/4 cup fresh dill choppedĀ 

1 tablespoon fresh lemon juice

2 tablespoons pistachios chopped and toasted

Directions

In a large heavy bottom pan heat olive oil for a minute add shallots cook for one minute stirring frequently. Than add cabbage 1 teaspoon sae salt and 1/2 cup filtered wayer and cover pan. Cook for about 3 minutes ot until cabbage can be stirred easliy. Cover again until tender about 3 minutes. Remove from heat stir in dill lemon juice and pinch of sea salt and pepper. Taste you can always add more lemon juice or sea salt.

Cabbage is that one vegtable that need a cheerleader...Its the heart of my favorite Kimchi, saurkuart and summer slaws.Cabbage is full of vitamin C and Magneseium. One cup only has 33 calories. It is a superfood for my menopausal girls. Loaded with vitamin K and anthocyanis that help brain fog and concentration.
