Classic Icebox Cookies (Slice & Bake)
Ingredients
1 cup unsalted butter, softened
¾ cup sweetener (monk fruit blend, coconut sugar, or organic cane sugar)
1 tsp vanilla extract
2 cups flour (einkorn works beautifully here)
¼ tsp salt
Optional Mix-Ins (choose 1–2)
Dark chocolate chunks or chips
Dried cranberries
Chopped pistachios or almonds
Orange or lemon zest
Cinnamon or cardamom
Espresso powder
Instructions
Cream butter + sweetener until smooth and fluffy.
Mix in vanilla.
Add flour + salt, mixing just until combined.
Fold in any mix-ins.
Divide dough in half and roll into logs (about 2 inches thick).
Wrap tightly in parchment or plastic wrap.
Chill at least 2 hours (or up to 5 days).
To Bake
Preheat oven to 350°F
Slice into ¼–½ inch rounds
Place on parchment-lined baking sheet
Bake 10–12 minutes, just until edges are lightly golden
Cool on pan for a few minutes, then transfer
