Classic Icebox Cookies (Slice & Bake)

Ingredients

  • 1 cup unsalted butter, softened

  • ¾ cup sweetener (monk fruit blend, coconut sugar, or organic cane sugar)

  • 1 tsp vanilla extract

  • 2 cups flour (einkorn works beautifully here)

  • ¼ tsp salt


Optional Mix-Ins (choose 1–2)

  • Dark chocolate chunks or chips

  • Dried cranberries

  • Chopped pistachios or almonds

  • Orange or lemon zest

  • Cinnamon or cardamom

  • Espresso powder


Instructions

  1. Cream butter + sweetener until smooth and fluffy.

  2. Mix in vanilla.

  3. Add flour + salt, mixing just until combined.

  4. Fold in any mix-ins.

  5. Divide dough in half and roll into logs (about 2 inches thick).

  6. Wrap tightly in parchment or plastic wrap.

  7. Chill at least 2 hours (or up to 5 days).


To Bake

  • Preheat oven to 350°F

  • Slice into ¼–½ inch rounds

  • Place on parchment-lined baking sheet

  • Bake 10–12 minutes, just until edges are lightly golden

  • Cool on pan for a few minutes, then transfer
