Southwestern Cauliflower Rice

This recipe is versatile!  You can swap out cauliflower rice for pre-cooked quinoa.

Ingredients

1 head of cauliflower  cut up and made into cauliflower rice or 1 bag of cauliflower rice

2 tablespoons evoo

2 cloves smashed chopped garlic

1/2 red onion chopped

1 red  pepper diced

1 yellow pepper diced

1 can black beans drained and rinsed

 1 handful of chopped cilantro or thyme or basil

pinch sea salt and pepper

 1 lime 



Directions

In a large saute pan on medium high heat  add EVOO wait 1 minute add garlic stir add red onion red and yellow pepper stir 1 minute add cauliflower rice stir until combine pinch sea salt and saute about 5 minutes until veggie soften toss in black beans saute for about 5 minutes take off heat and add herbs and a squeeze of lime ..

Put on some SALSA MUSIC and DANCE!!!
