Spicy Peanut Dressing

This is a fabulous dressing I make it thinner just by adding more coconut milk or even a little water. I like it this way over a salad with roasted veggies or veggie fried rice. Thicker for chicken or a dip ..


Ingredients

 ½ cup peanut butter 

1-inch ginger, grated 

 1 garlic clove, crushed 

1 red chili, deseeded & finely chopped optional

 2 tbsp Braggs  (liquid amino) 

Juice of 1 fresh lime 

2 tbsp coconut sugar  or

 ¼ cup coconut milk (depending on how thick you want your dressing) 

1 tablespoon honey 

1/4 cup coconut milk ( if you want it thinner add a little more)

 

Directions

To make the dressing whisk together peanut butter, ginger, garlic, chili, Braggs, lime juice, honey and 1/4 cup coconut milk in a medium-sized bowl until combined well. If you would like more liquid in your dressing add another 1/4 cup of coconut milk.
