I love this dip, it's got a little kick, but really creamy from the pumpkin. A nice twist on the regular hummus.
8 - 10 serving
3 cloves garlic
1 can organic pumpkin
1 can chickpeas drained and rinsed
1/4 cup EVOO
juice of 1 lemon
2 tablespoon tahini
1 teaspoon cumin
1 teaspoon harrisa
1/4 teaspoon raw honey
1 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon pepitas toasted
In the bowl of food processor add garlic and pulse a few times add, pumpkin, chickpeas, lemon, tahini.cumin,harrisa, honey, and process. While the machine is running add EVOO. Sprinkle with sea salt and pepper pulse to combine. Pour that into a serving bowl and garnish with toasted pepitas.
Serve with some veggie or love it spread on lettuce leaf with some veggies and rolled up!
