Steamed Greens with Lemon & Cilantro

What a super-powerful dish full of manganese, fiber, potassium, folate, vitamin K iron it's crazy and it only has 2 ingredients.

Steamed Cabbage and Spinach is light enough to add to your summer BBQ and hearty enough to keep you satisfied not to sway over to the traditional BBQ sides.

Ingredients

1 head cabbage about 1 pound

7 cups spinach

EVOO

zest of 1/2 lemon

1/4 cup cilantro chopped 

sea salt 

pepper

Directions

Cut the cabbage into quarters lengthwise and cut out the core.

Slice the quarters crosswise into 1-inch ribbons.

Steam or 4 minutes or until it starts to soften.

Toss spinach on top of cabbage and steam for 3 more minutes.

Drain and transfer Cabbage and Spinach to a platter and drizzle EVOO and stir in cilantro and lemon zest. Season with sea salt and pepper. 

This can be room temp or HOTTT.
